This simple recipe will show you how to easily DIY your own almond paste.
Weigh out your ground almonds. You can buy ground almonds, but you can also buy whole blanched almonds or flaked almonds, and simply process into your food processor until you have a fine meal.
Add an equal weight of sugar.
Add one tablespoon of almond extract.
Add one egg.
Whisk until the mixture clumps together, then switch to a spatula.
Mix together until you have a cohesive mixture. Wrap in clingfilm and leave in the refrigerator until using, or alternatively, freeze.
- 150 grams ground almonds
- 150 grams sugar
- 1 tablespoon (7 grams) almond extract
- 1 egg
- Put equal amounts of almond and sugar in bowl in scale
- Add almond extract and egg
- Mix with a whisk
- Switch to a spatula
- Set aside until ready to use
