Almond Paste (Amandelspijs) Recipe

IMG_5002-3Almond paste is an ingredient in many recipes – and an annoying ingredient at that, because not all stores stock it, and it can be very expensive. However, it’s extremely easy to make yourself!

This simple recipe will show you how to easily DIY your own almond paste.

Weigh out your ground almonds. You can buy ground almonds, but you can also buy whole blanched almonds or flaked almonds, and simply process into your food processor until you have a fine meal.

Add an equal weight of sugar.

Add one tablespoon of almond extract.

Add one egg.

Whisk until the mixture clumps together, then switch to a spatula.

Mix together until you have a cohesive mixture. Wrap in clingfilm and leave in the refrigerator until using, or alternatively, freeze.
