How to make Marzipan

Marzipan is a great cake covering, and can be modeled into shapes and made into chocolates. Learn how to make your own marzipan.
Serves: Roughly 1 pound of marzipan
  • 350 grams icing sugar, sifted + more for kneading and dusting.
  • 350 grams ground almonds
  • 1 tablespoon almond extract
  • 2 teaspoons rum
  • ½ tsp salt
  • 110 grams pasteurised egg whites
  • 1 tsp lemon zest
  1. You can mix this in a bowl and use your hands to knead the mixture, however, a food processor really is better if you have one available, as you will end up with a finer textured marzipan.
  2. Add the almonds and sugar into a food processor. Pulse a few times to remove any clumps.
  3. Add the eggs, almond extract, and lemon zest, and pulse until the mixture comes together in a nice dough.
  4. Remove the dough from the food processor, and knead into a smooth dough using more icing sugar.
  5. Wrap in plastic wrap and leave to cool in the refrigerator for at least an hour before using. You can keep this in the refrigerator for up to a month.
